Smoked Salmon

Ingredients

1 Quart Water

2 Cups Brown Sugar

2 Cups Rock Salt

1/4 Teaspoon Garlic Powder

Directions

Mix marinade in rectangular casserole dish.
Place Salmon in marinade, skin side up.
Cover and marinate overnight.

Pellet Smoker
Preheat smoker on smoke setting.
For better flavor, add a smoke tube as well. Fill and light smoke tube, making sure it's off to the side and NOT directly under the fish.
When smoker is up to temperature, place fish directly on grates.
Smoke on Smoke setting for 3 1/2 hours.
If needed, raise temp to 200 degrees until Salmon is at 155 deg.
